The inspiration

While the chef grew up in the Pacific Northwest and trained in Japan with a Michelin-starred chef, his latest mission is to introduce customers to his favorite food from childhood. Thanks Mom for making such an incredible version of that ultra-crunchy chicken known as karaage.

In one of the first pop-ups to test the marketability of this concept, Taku sold more than 400 fried chicken sandwiches in under three hours. The line for this golden take-out treat stretched down the block, around the restaurant that had been home to his first venture. Naka was a high-concept, high-end dining destination the chef launched in 2015 at age 25. That spot eventually changed its name to Adana and shifted into a more casual approach that seemed better suited for the neighborhood.
