There’s nothing I love more than pairing a good blanc de blancs (Pol Roger 2009 is one of my favorites) with something that’s traditionally offbeat: fried chicken, uni nigiri, and even Singaporean fish skin snacks. The crisp acidity of Champagne does wonders to any dish or meal that’s got enough salt or fat to cut through.
But I’m a tad bit more open-minded during this time of year, when I tend to crave for festive and well-balanced libations that I can nurse sans food.
